December and Sugar Plum Truffle Dreams

Here’s the little pause we feel every year as the holiday season draws in a big breath, and prepares to spin into non-stop fun! We try to simplify our lives, and still they become cluttered with demands and busy, busy, busy. We go at a fast pace all year, but this time of year we dance even faster, rivaling the spinning dream of the Sugar Plum fairies.

Well, take a deep breath yourself and make some of your holiday preparations simpler by ordering Intrigue truffles as gifts, and desserts for your celebrations.


Saint Basil Truffle – Sweet basil, the herb of love. Considered by some to be the flora expression of loving kindness, basil is undoubtedly a tasty symbol of good will. Mix that up with dark chocolate and you have an unbeatable combination.

Rumple Minze Truffle – The 100 proof peppermint schnapps mixed into this deep chocolate will make you think of chocolate-covered candy canes. Traditionally this German-style peppermint liqueur is followed with a chocolate chaser, so we’re holding pretty close to custom with this one.

Orange Spice Truffle – The warm spices and vivid orange of this truffle will bring the winter holidays to mind. Using fresh orange zest, cloves, allspice, and cinnamon to evoke aromatic seasonal memories.

Sugar Plum Truffle – NEW! Caramelized sugar and Mirabelle (plum brandy) join forces to create a special treat. Heated over a high, fast flame until it transforms into a syrupy version of itself, the sugar we use comes from organic, fair trade, evaporated cane juice. It is said that the variety of plum (Mirabelle plum) used to make this brandy was first a gift to the people of Lorraine, France by Saint Nicholas.

Juniper Berry Truffle – NEW! After crushing the berries with a mortar and pestle, our Chocolatier steeped them in the cream, and then strained out the bits, leaving only the fresh flavor behind. What flavor is that? Well, this one tastes like a Christmas tree, of course! (A chocolate-covered Christmas tree, at that.)

Jamaican HOT! Truffle – Heat up your mood with this HOT! truffle. Blending dark rum, nutmeg, honey, vanilla, habanero peppers together with this fine chocolate and cream seems to bring out the holiday cheer.

November’s Truffle Flavors

With three new truffle flavors to introduce this month we have been working overtime! The focus in November is on good food, gratitude for what we’ve got, and warming flavors as the seasons cool off. Like it or not, we are making a bee-line for winter. But with the right influences (like warm drinks, warm spices, and warm friends!), and a positive attitude, we will sail right through the dark months.

Cranberry Truffle – NEW! A brand new concoction in time for Thanksgiving, this truffle is flavored with cranberry juice. Cranberries grow in acidic bogs across the northern hemisphere, and The Cranberries are an awesome band from Ireland where there are lots of bogs! First called Crane-berries by white settlers because of the shape of the plant’s flower, the same fruit was called sassamanash by the Native Americans who used it in pemmican, and purportedly served the fruit to settlers in what was to eventually be called The First Thanksgiving.
Orange-Fennel Truffle – NEW! Using fresh orange zest and fennel “seed”, this truffle will make an impression that you will not soon forget. Commonly called and sold as “seeds”, this is actually the fruit of the fennel plant which gives theslightly anise, or licorice flavoring. Naturally sweet all on it’s own, fennel “fruit” has many known medicinal values, including calming the stomach and aiding in digestion. Paired here with orange, the combination will give you pause as your tastebuds work to decipher its complexity. Recognized as a noble plant in many cultures, it was said to be the fennel plant that Prometheus used as a torch to “borrow” a bit of fire from the gods!
Hot Toddy Truffle – NEW! An off-shoot of the original Scottish recipe, our hot toddy serves up a touch of whiskey, honey, fresh lemon zest, and cloves. Its said that a hot toddy used to be considered a viable treatment for the common cold, or to warm up a chilled traveler. We still think its a heck of a comforting gesture, and that warms us to the cockles of our hearts!
Saint Basil – Apparently even saintliness can run in families! Did you know that Saint Basil the Great, defender of the poor, and social activist of the 2nd century, had a sainted father (St.Basil the Elder) and two sainted siblings (sister Macrina, and brother Gregory)? Holy canonization, Batman, that’s a lot of saints in one family! As ever, the fresh basil in this truffle wants you to sit up and take notice of it’s vivaciousness.
Jamaican Hot! Chocolate Truffle – The dark rum in this truffle is a cold remedy (in small doses) back in its native Jamaica. Add nutmeg, honey, and vanilla to the mix and the best of the darkness from the chocolate and rum are highlighted. We just gotta’ throw some habanero peppers in to fuel this delicious fire!
Pie Are Round Truffle – These are the spices that will remind you of luscious pumpkin pie; cinnamon, ginger, nutmeg, allspice, and cloves. No pumpkin to be found here, just lots of awesome spicy flavor, swirled around in dark chocolate. Reminds us of nurturing bakers, and their welcoming kitchens that we love to visit.

That lineup oughta’ get you warmed up enough to dive into the holiday season, eh? We find that a bit of nice chocolate gives us the fortitude to tackle a project. October Flavors and Musings

This month we move more deeply into Autumn and prepare to embrace our favorite holiday: Halloween! October brings us closer to the Earth and puts us more in tune with the seasons as we finish our harvesting (picking pumpkins!). As we clean up our gardens it’s a good time for reflecting and assessing where we are, how we are doing, and where we’d like to do better.


Apple Cider Truffle – There’s nothing quite like a mug of hot apple cider on an autumn day with a chill in the air. Ever wonder what the difference is between cider and juice from apples? Well, it may depend on where you are asking the question. Ask for cider overseas and you will get a fermented beverage of the alcoholic variety. In the States, apple juice is one step of processing beyond cider. Unfiltered, dark amber liquid, cider contains all the lovely bits of apple that would be missing from juice. Longer in flavor, but shorter on shelf life, cider is a seasonal treat that you should be sure to enjoy this time of year. Why not in a truffle?

Jamaican HOT Chocolate Truffle – Rich flavor with dark rum, honey, nutmeg, and vanilla running over the mellow, but persistent heat of the habañeros. Chilis are good for you. The capsaicin (what makes them hot) in them cause endorphins to be released that stimulate a sense of well-being!

Saint Basil Truffle – Fresh, organic basil is what puts this at the top of the favorite list for so many of our customers. In French Basil is referred to as “l’herbe royale”, and it is said to provide strength while fasting in Jewish custom.

NEW! Grappa Truffle – Literally translated, grappa means “grape stalk” to indicate that it is made from distilling the solid remains of grapes once they are pressed for wine-making. Mostly grape skins, but seeds and stems might be included, this is recycling in motion. Since maybe 1000 A.D. Italians have been “re-using” what might be thrown away to make a potent drink.

Cacao Truffle – The cradle from which chocolate emerges, cacao beans are the dried and fermented seeds of the theobroma cacao tree. Processed further they become our fine dark chocolate. We add a sprinkling of organic, fair-trade cacao nibs (the bits of roasted beans that add a tiny bit of texture and coffee-ness). A splash of white rum pulls it all together.

Vrai Chai Truffle – A complex combination of 14 different roots, spices, herbs and fruit, this is the real chai tea flavor. We love chai, we really dislike chai-like flavorings. Chunks of the actual organic, once-living ingredients go into our blend to make it multi-dimensional and traditional. Black tea, ginger, black pepper, cinnamon, orange peel, astragalus , cardamom, coriander, galangal, gingko, gotu-kola, fo-ti, nutmeg, cloves, and vanilla beans.

NEW! Ghost Chili Truffle – Happy Halloween, All you Ghosts and Goblins! The Ghost Chili is also called Bhut Jolokia, and hails from the Assam region of India originally. It’s so hot that it’s listed in the Guinness Book of World Records as the hottest chili in the world. Toting around 1 million Scoville units per square bite, this baby is scary (think 8,000 Scovilles for a jalapeno, a mere 580,000 units in an habanero!). They say it’s so hot, you feel like you’re dying. It’s so hot, you might just end up as an apparition! (Still want to try it?)

August’s Tempting Flavors

August. A month of heat and humidity and tornadoes; puts us in mind of the sturdy band of five (don’t forget Toto!) wending their way down the yellow brick road….
Tempting as it is to rest for a while in a field of poppies, don’t do it! You might never awake in time to try this month’s awesome flavors.

Jamaican HOT Chocolate Truffle – Made with dark rum, nutmeg, honey, vanilla, and habañero chilis. Capsaicin from chili peppers (like the habanero) is said to have profound health affects, including anti-bacterial powers and, anti-inflammatory abilities.


Saint Basil Truffle – On our Top 10 Best Smells List; Fresh Basil. Add organic Basil to high quality chocolate and you have just combined 2 of our Top 10 Favorites!
Good Thymes Truffle – The ancient Greeks are said to have taken courage from the medicinal properties of this herb, and its understandable when you get a good whiff of it. Restorative, without being overwhelming, thyme has a lengthy history as a medicine and culinary additive. We use organic thyme that is freshly harvested in this truffle.
Grapefruit Truffle – You will be surprised by the freshness and zing of this truffle. The fresh, organic grapefruit zest stamps its foot coming out of the gates! This is our answer to the old “grapefruit diet”, but the fun way!
Paradise Truffle – Grains of Paradise  has spiced the cooking of West Africa for centuries. A slight peppery kick is a precursor to this complex flavor. From the prolific ginger family, this spice is often compared to cardamom and black pepper.

What’s the Buzz? Truffle
– Everyone knows that bees make honey. But ever think about where those bees get what they need to make that honey? Well, it’s nectar from flowers, of course. What flora the bees happen to live next to is where they will harvest the sweet nectar that they turn into honey. Sometimes its fields of clover, or tupelo, or a mixture of wildflowers, all of which affect the flavor and intensity. We use pure honey, unadulerated by common additives.

That’s what this month’s flavors remind us of; an explosion of colors and big tastes! Ever notice how just about any summer event seems like a good excuse for fireworks? The same goes for a box of Intrigue truffles; great for any event.

Balsamic-Strawberry Truffle

New! Balsamic-Strawberry Truffle – Shocked at this combo? Well, it’s actually an old standard; dipping fresh strawberries into a good balsamic vinegar is a mouth-freshening treat! Once again, we have translated a something gourmet into chocolate-language. In a confounding way this vinegar made from un-fermented grapes (it’s not a wine vinegar!), brings out the sweetness of the fresh fruit perfectly. Only fresh, organic strawberries are used along with quality balsamic vinegar.

Lavender Lemonade Truffle

New! Lavender Lemonade Truffle – Summer and lemonade (evoked by fresh lemon zest); synonymous, or what? Memories of lemonade stands, whether on long, dusty country roads, or in the thick of suburbia, occupy a place in most of our childhoods. Lavender (Washington-grown!) goes the extra mile to soothe and refresh in the summer heat. Put the two together (and mix it into a truffle, of course) and you have the poster-truffle for a summer day.

Coconut-Cardamom Truffle

Coconut-Cardamom Truffle – You don’t have to be a vegan to appreciate this truffle (though some of our best friends are vegans, and they tell us this is great). Using coconut milk to create non-dairy creaminess makes for a delightful taste. Used around the world in cooking, baking and medicinally, you might recognize cardamom in Scandinavian breads or in curries.

Mojito Truffle

Mojito Truffle – (That’s moe-hee-toe, gringos!). “Mi mojito en la Bodeguita” is written on the wall of the Cuban bar (the Bodeguita) in Hemingway’s handwriting. Quite an endorsement for this tropical-heat defying highball concocted of white rum, fresh lime zest and fresh organic mint. Check it out if you ever get there, the writing is still on the wall! (Intrigue’s favorite Hemingway pick; “The Old Man and the Sea”, of course! Also set in Cuba.)
